So I already have all my blog posts done for blogmas and it's Tuesday evening at the moment. But I made some amazing cookies this afternoon and wanted to share the recipe with you, and it also matches the other Day 11 post so here you go!!
What you need:
200g butter (at room temperature)
300g caster sugar
1 large egg
325g self raising flour
a dash of milk
200g of any chocolate you like (you can choose however much and what you like)
Let's go:
-Preheat you oven to 200C (390F)
-whisk butter and sugar together until it's creamy
-crack in the egg and mix it through
-add the flour a bit at a time
-break up the chocolate (I chose Milka luflee) and add it to the mixture
-grab the dough from underneath and spread the chunks
-shape the mixture into 10 balls (amount depends on how big you want your cookies)
-put on baking tray covered in baking paper
-bake for 10-12 minutes (mine took about 9!)
-let them cool
(I took half the ingredients and made 4!)

Day 11
The day before Christmas
Now, I feel like the last weekend before Christmas eve is the most stressful. You gotta check that you really didn't forget to buy a present for your mother's sister's best friend, that you have enough wrapping paper, for everything you bought and that you don't run out of bows, ribbons, tape, stickers, fir branches.....
Today is December 23rd, and the countdown to 2016 starts, and all the stress slowly fades out, and you get really exited and start planning and thinking about your new years resolutions. Which might actually be more stressful than the week before Christmas!!
But now you just gotta chill and be exited for the best day of the year (?)
Cookies in a jar I: Grab some yogurt glasses or any other (they just have to be big enough) decorate the glass, bake some cookies, put them in there, tie a bow around it! TADAA!
Cookies in a jar II: Buy a glass jar or just get a yogurt glass again. (They have to be closeable!)
Layer: 100g flour
1 tbs baking powder
100g soft brown sugar
30g cocoa powder
50g dark chocolate chips
50g white chocolate chips
Add: 1 egg
80g butter
Bake: at 170 C for 7-9 minutes
Cookies in a jar III: Special

Day 9
TEA. ❄
So I've only got the whole tea-vibe quite recently. Before I always stuck to my good old hot chocolate- which I still love, don't get me wrong. But when I'm sitting in my room with my fairy lights on and some candles burning on my window sill, it's quite nice to have a cup of tea. I'm not really into earl grey or other really ,,grown-up-tea-flavors'' if you know what I mean. I tried out many different ones and came to the conclusion that I have four favorites.
Creating the perfect vibe for a festive day is fairly easy, and one of my favorite things to do as well.

My four favorites:
1.Rooibos Meßmer
2. Rooibos-Vanilla Südafrikanischer Ovambo

Day 1
Linzer Schnitten
250g fruit jam
350g flour
200g ground hazelnut
120g sugar
1 pinch salt
1 egg
250g soft butter
250g fruit jam
1 egg yolk
2 tbl icing sugar
Put flour, nuts, sugar, egg, salt and butter in a bowl and mix it with the dough hook first. Then knead it together with your hands to a smooth dough.
Divide the dough in two and wrap each portion in cling film, and put it to cool into the fridge for about an hour.
Divide the dough in two and wrap each portion in cling film, and put it to cool into the fridge for about an hour.
Cut two sheets of backing paper à 36x30 cm.
Roll out the dough portions on a floured surface one after another to about 25x20 cm.
Put those dough sheets onto the baking paper, and roll it out til it's the size of the paper.
Pull one dough half with the baking paper onto a baking tray and stick in a fork multiple times.
Then spread the jam on top, and let it cool in the fridge.
Take the second half and roll it out as described, put it on baking paper, and put it in the fridge for 20 minutes. (If it's as cold where you live, as in Germany you can put it outside.)
Preheat the oven to 180 C (350 F).
Cut out little holes (Ø 1,5 cm) out of the second dough sheet.
Put this dough sheet turned around onto the first jam-sheet, and carefully pull off the baking paper.
Spread a thin layer of egg yolk, and spread out the little cut out circles on top.
Put the filled dough sheets into the oven for about 16-18 minutes, until they are golden-brown.
Take it out and let it cool completely.

Nut Wedges
TUESDAY
So I'm kinda swerving into the baking lane(?) and I found a new recipe book on the book shelf. I looked through it and found "Nussecken", and because it's almost Christmas, I guess, I made them. It got me into a really festive mood and I feel like it was a mistake to make them because it's mid October. But you can never be too early for Christmas baking!
What you need:
-*250g flour
-*100g sugar
-*100g margarine
-*1 packet vanilla sugar
-*2 eggs
-*1 teaspoon backing powder
_ _ _ _ _
-1 jar apricot jam
-100g chopped almonds
-100g chopped hazelnuts
-3 tablespoons water
_ _ _ _ _
-200g bittersweet chocolate
First step:
Mix all ingredients (*) in a bowl until you get a stiff dough. You can knead it if it gets too hard.
Second step:
Grease the baking tray with margarine. (Don't forget the corners!)
Third step:
Place the dough onto the tray and smooth it out.
Fourth step:
Spread out the apricot jam onto the dough.
Fifth step:
Take the leftover ingredients and bring them to boil in a pot.
(Don't forget to stir them, they will get burnt quickly!)
Sixth step:
Spread the hot mixture on top of the apricot jam.
Seventh step:
Put the tray into the oven at 175C (~350F) for about 25-30 minutes.
Eighth step:
Take it out of the oven and let it cool down.
Ninth step:
Cut the dough into many little triangle shapes. But keep it on the tray.
Tenth step:
Melt the chocolate in a bowl on top of hot water.
Eleventh step:
Dip two corners of each nut wedge into the chocolate.
TADAA!
Tell me in the comments what your favorite fall/winter recipe is :)
If you bake the nut wedges, tag them with #k80cake on instagram so I can see them :)

Apple pie
MONDAY
Hi!Throughout October I'm getting more and more into the autumnal vibe and because it's my favorite season it's not that hard.
Little update side note: I even started doing yoga. Firstly to kinda built up my lost flexibility again and secondly so I could contort my body into ridiculous shapes in order to make up for the lack of full length mirrors I have.
But anyways, today I have a recipe we already made twice this month, because it's so good.
-1kg apples
_ _ _ _ _
-*150g Margarine
-*100g Sugar
-*1 Egg
-*1 tablespoon Milk
-*300g Flour
-*2 teaspoons backing powder
_ _ _ _ _
-100g Sugar
-2 teaspoons cinnamon
First step:
take about 16 apples and peel them. Then cut them into thin slices.
Second step:
knead all ingredients with a star * to a shortcut in the same order they are listed.
If it doesn't form into a smooth dough use your hands!
Third step:
take 2/3 of the dough roll it out and smooth it into a greased springform pan. pull up the edges.
put the other third into the fridge.
fourth step:
take the sliced apples and place them onto the dough in the pan.
fifth step:
mix 100g of sugar with the cinnamon and spread them on top of the apples in the pan.
sixth step:
get the leftover dough from your fridge and roll it out. layer it on top of the apples to cover them.
seventh step:
put it in the preheated oven for about 60 minutes at 170C (~340F)
eighth step:
enjoy!
tell me in the comments if you liked it and tag the cake on instagram with #k80cake .
